Ingredients

Lavender Simple Syrup

  • ½ cup water
  • ½ cup sugar
  • 1 teaspoon dried lavender

Lavender Gin and Tonic

  • ½ oz lavender simple syrup
  • 2 oz gin
  • 4 oz tonic water, (fever-tree mediterranean works well)
  • Fresh lavender bud and lime wedge, (to serve)

Instructions

  • To make the lavender simple syrup, add the water, sugar, and dried lavender to a small sauce pan and bring to a boil. Simmer for 5 minutes, then, using a mesh sieve, strain into a jar and let cool.
  • To prepare the cocktail, add ice to a collins glass and pour in the lavender simple syrup, gin, and tonic. Give it a stir and garnish with fresh lavender and lime.

Notes

This recipe makes more simple syrup than needed for 1 drink, it will stay good in the fridge for several weeks.
