3tablespoonolive oil
1clovegarlic,(crushed and minced)
2teaspoondijon
2teaspoonhoney
1teaspoonsalt
1teaspoondried mint,(optional)
½teaspoonfennel seed,(crushed, optional)
½teaspoonorange zest,(optional)
Salad
8ozArugula
1bulb fennel(cored and sliced into thin half moons, or shaved on a mandoline)
½cupfresh pomegranate seeds(or more to taste)
freshly cracked pepper(to taste)
Instructions
Put all dressing ingredients into a large bowl and whisk until well combined.
Put Arugula, Fennel, and Herbs into the bowl and toss well with the dressing. Place salad into individual bowls and top with Pomegranate Seeds and and freshly cracked pepper, if desired.
