Tuna and Corn Salad

An elevated tuna salad using sweet corn and green beans with a mayo based dressing.

Ingredients

Dressing

  • 2 teaspoon greek yogurt
  • ½ cup mayo
  • 1 lime, (juiced)
  • ½ cup parmesan cheese, (grated or any other sharp cheese)
  • 2 teaspoon olive oil
  • ½ teaspoon cracked pepper
  • ½ teaspoon smoked paprika

salad

  • 6 oz can of tuna, (solid white albacore if possible)
  • 1 cup frozen sweet corn, (thawed)
  • ½ cup frozen green beans, (thawed and diced)
  • 2 green onions, (sliced thinly)
  • ½ cup cilantro, (sliced)

Instructions

  • In a large serving bowl, Mix together all of the dressing ingredients until well combined.
  • Then, flake the canned tuna directly into the bowl (unless you have pre-flaked tuna). Add the thawed corn and green beans, green onions, and cilantro to the bowl and toss well.
  • Serve with a pinch of paprika on top.
